Heritage carrots come in purple, red, yellow and black, which is how carrots used to be before Dutch growers developed a uniform orange variety, supposedly in honour of their national colour.
Grown in the sandy soil of Northern France, these heritage carrots are exceptionally sweet with a gentle mineral flavour. They can be small and round, or long and spindly. These pretty carrots are crisp, with an intense earthy sweetness.
