Its long taproot has cream-colored skin and flesh, and, left in the ground to mature, it becomes sweeter in flavor after winter frosts.

A relative of the carrot, parsnips are a super-hardy, cool-season crop that requires a long growing season and is best harvested after a few fall frosts.
